BackThis Crozes-Hermitage white wine is intended to reflect the vineyard and the philosophy of the Domaine des Combat.
The Domaine Blanc cuvée expresses both the assertive character of the terroir and a minimalist but controlled vinification.
VINEYARD - TERROIR
A single MARSANNE grape variety makes up this cuvée, a blend of 3 islets making up the estate's vineyard:
- 25% coming from the oldest alluvial terraces of the Crozes-Hermitage appellation just at the foot of the village of Mercurol on strongly decomposed soils and very well balanced between clay and gravel.
- 25% of the large Chassis terrace, further south between Mercurol and Pont d'Isère, also of alluvial and glacial origin but slightly more recent, with more stony and warm soil.
- 50% from the very beautiful terroirs of the Coteau des Pends between Mercurol and Chanos-Curson, on complex soils mixed with gravel, clay and sand having the particularity of being of both quaternary and tertiary origin.
VINIFICATION - AGING
A few days before the mechanical harvest, a strict sorting is carried out in the vineyard by manual elimination of the least qualitative grapes.
After harvesting by means of a harvesting machine equipped with an on-board destemmer, the grapes are delicately pressed (selection of the most noble juices from low pressure), the ends of the presses are separated and vinified separately.
Fermentation takes place at a controlled temperature between 14 ° and 18 ° depending on the progress of the degradation of sugars in stainless steel vats for 2/3 of the cuvée and in new 300L barrels for the rest.
Malolactic fermentation is deliberately sought on the whole.
No input is added except a slight sulphiting at the end of the malolactic fermentation.
Aging on fine lees with regular stirring (resuspension of the lees) and defined by tasting.
The containers used for winemaking are the same for aging. The barrels are rigorously selected for their oak origin, mainly from the Vosges and Haut-Bourgogne (very fresh and dynamic structure on the palate) and for their specific toast, very soft and not very marked (very subtle aromas and well integrated with the aromas of the wine). Aging for a period of 7 months.
