WINEYARD - TERROIR
The 100% SYRAH grape vines of 15-20 years of average age are located on the large Chassis terrace, the largest, oldest and most qualitative plateau in this southern area of the Crozes-Hermitage appellation.
VINIFICATION AND AGING
At the Domaine des Combat (Mercurol 26), the vines are trained to a great height of two meters to capture as much light as possible. Severe disbudding is carried out to ensure the best aeration of the stumps and leaf stripping at the beginning of September optimizes the maturity of the grapes.
The grapes arrive in the cellar, destemmed, vats in stainless steel vats.
Two reductions are carried out at the start of fermentation and are the only concession to a Burgundy-type vinification.
The temperatures are kept low enough between 20 ° and 23 ° to preserve the fruitiness and freshness.
The maceration time this year was 21 days.
