The Domaine Rouge cuvée reflects the vineyard and the philosophy of Domaine des Combat (Mercurol 26 - France).
It expresses the assertive character of the terroir and a minimalist but controlled vinification for this red wine from the Crozes-Hermitage Appellation.
WINEYARD - TERROIR
This cuvée is a blend of 3 islets making up the estate's vineyard:
- 30% coming from the oldest alluvial terraces of the Crozes-Hermitage appellation just at the foot of the village of Mercurol on strongly decomposed soils and very well balanced between clay and gravel.
- 45% of the large terrace of the Chassis, further south between Mercurol and Pont d'Isère, also of alluvial and glacial origin but slightly more recent, with a more stony and warm soil.
- 25% from the very beautiful terroirs of the Coteau des Pends between Mercurol and Chanos-Curson, on complex soils, mixtures of gravel, clay and sand having the particularity of being of both quaternary and tertiary origin
VINIFICATION - AGING
This cuvée is made from the only SYRAH grape variety. The vines of 20-25 years of average age are trained to a great height of 2m to capture as much light as possible. Severe disbudding is carried out to ensure the best aeration of the stumps and leaf stripping at the beginning of September optimizes the maturity of the grapes.
The grapes arrive in the cellar destemmed, vatted in tapered stainless steel vats. This unusual form in the region optimizes and facilitates the sweetness of the punching down decided upon for tasting throughout the maceration.
Two reductions are carried out at the start of fermentation and are the only concession to a Burgundy-type vinification.
The temperatures are kept low enough between 20 ° and 23 ° to preserve the fruitiness and freshness then are raised at the end of maceration to 27 ° -29 ° to optimize the extraction and the coating of the tannins.
A little more intense pumping over and punching down than in the Bacchus cuvée allows a better expression of the tannic potential and the richness of these grapes.
The maceration time this year was up to 30 days.
No input is added except a slight sulphiting at the end of the malolactic fermentation.
