VINIFICATION - AGING
Harvests are carried out at night and early in the morning to get the best out of the grapes and preserve their aromatic potential and freshness. The harvest is destemmed and sorted in order to macerate the most beautiful berries which then leave for a cold pre-fermentation maceration without sulphites for 72 hours (allows to extract the ruby color so typical of Pinot Noir and to optimize the concentration. aromatic).
Fermentation in thermo-regulated stainless steel vats between 18 ° C and 25 ° C for 18 days.
Pigeage and pumping over up to twice a day depending on the vintage to obtain a fleshy and structured product that has retained all its fruit aromas.
Part of the wine is aged in stainless steel vats while the other spends 9 months in oak barrels. The wine undergoes its malolactic fermentation there, allowing it to round out and refine.
