VINEYARD - TERROIR
The Eric Louis estate extends over an area of 32 hectares around Thauvenay in the Center Val de Loire region (department 18), on the south-eastern slopes of Sancerre.
The vines are planted on a terroir made up of two thirds of clay-limestone and one third of flint.
The red Sancerre wine is grown on chalky clay soils, the latter having a preference for heavier soils whose red retains a light fragrance.

VINIFICATION - AGING
Harvests are carried out at night and early in the morning to get the best out of the grapes and preserve their aromatic potential and freshness. The harvest is destemmed and sorted in order to macerate the most beautiful berries which then leave for a cold pre-fermentation maceration without sulphites for 72 hours (allows to extract the ruby color so typical of Pinot Noir and to optimize the concentration. aromatic).
Fermentation in thermo-regulated stainless steel vats between 18 ° C and 25 ° C for 18 days.
