VINEYARD
The Eric Louis winery extends over an area of 32 Ha around Thauvenay (Center Val de Loire region in France), on the south-eastern slopes of Sancerre.
The vines are planted on a terroir made up of two thirds of clay-limestone and one third of flint, soils perfectly suited to the Sauvignon grape variety, whose white draws its subtle complexity.
Pouilly Fumé Eric Louis is planted on a terroir dominated by flint.

VINIFICATION - AGING
The harvest begins as soon as the grapes reach their optimum level of maturity. As soon as they are harvested, the berries are taken to the press to preserve the aromatic potential.
Fermentation is carried out over a period of 4 to 8 weeks in temperature-controlled vats with precise temperature control, the wine being kept between 16 ° C and 21 ° C.
Until spring, the wine is aged on fine lees in stainless steel vats inerted under nitrogen, thus developing its finesse.
Bottling is carried out under nitrogen in order to limit sulphites.
